Stuffed peppers - 21 day approved :)

Okay so today I decided to make my own version of stuffed peppers since I have never made them before with just some things I had in the fridge. So first off, I buy my chicken and ground turkey at Sam's Club. I feel like I get the best deals there for these items and I get A LOT of meals from buying them in bulk. I was able to separate and prep four bags of ground turkey with the big package I got of it. I just cut the meat down the middle and package them one half in each bag. Items I used to make this were:

*ground turkey
*minced garlic
*red onion
*1 jalepeno pepper - Gives it a little kick ;) - If you are not a fan of spicy food leave this out. For me, the spicier the better.
*black beans 1/2 cup
*corn 1/2 cup
*4 dashes of soy sauce
*2 packets of stevia sugar
*chili powder
*garlic powder (I love garlic if you can't tell)
*pepper
*dash of salt
*italian seasoning
*3/4 of a small can of tomato sauce
*2 whole peppers cut in half - I bought my peppers at Sam's too. Not a bad deal for them. I am not a fan of green so I was happy to only get 2 red, 2 yellow, and 2 orange peppers. :)

Before starting to cook set your oven to 350.

While cooking the turkey I added ONLY the italian seasoning and pepper. After draining the turkey I added all the other ingredients on low. I even added some more italian seasoning after draining.

After cooking it all together I just scooped a little bit into each pepper half and put them on my Pampered Chef pan and stuck them in the oven for about 10 minutes at the most.

One and 1/2 of another pepper equals: 1 green (pepper) 1 red (turkey) 1/4 yellow (corn, because there wasn't that much to begin with -- you used 1/2 cup for the entire recipe not each stuffed pepper).

TIP: You could always make some brown rice and use the other 1/4 of your yellow to add rice to get a whole yellow in. I was able to do this for dinner later today.

You will see that you will have some peppers left over and that you will have LOTS of ground turkey mix left over to have a snack by itself later in the week, with some rices or other veggies. I am making zucchini boats wkth left overs this week. ;)

Monday Made It - July 6th :)

So, this post is a little late tonight. I didn't get a chance to post anything at all last week as my 2 cousins were here from Puerto Rico. We had a lot of fun. We  hung out by the pool, my dad took them to a baseball game to see the Tampa Bay Rays over in St. Pete, & went to Busch Gardens...my back was on fire from all the walking :( Overall between my parents, sister, aunt, and I we kept them busy!

For the Fourth of July I had 7 places to be at, but could only commit to making it to 3. And I DID make it to all 3 places. I had lots of fun at each party getting a chance to hang out, relax, and enjoy some down time with some awesome people.

And now I made it to Monday! I am on the schedule for jury duty this whole week..dun dun dun.. so I am on hold on making any plans ahead of time since I am not sure whats going on yet. I have never had to actually call to do this whole thing yet. The first time I was mailed a letter to go I was in college and was able to get out of it & then I received a letter in May but they scheduled me for the day of my little kindergarten students graduation day. I obviously had to call and tell them there was NO way I could miss that special day...so naturally they put me back on the schedule for this month.

So today, I have been working on getting a template together on Google Docs to help me start planning for when we go back. I was changed to 4th grade about 2 weeks ago so this is a change from kindergarten. I used to teach 4th & I don't mind the grade, but I am nervous to go back & I am upset leaving my co-teacher. The template basically is a table with areas that include: focus standards, daily focus, materials, hooks, whole group, & independent time. I am hoping this helps me get on track for a different year & not feel so stressed when we go back.




Another thing I worked on was creating my FIRST challenge group! YAY! I am so excited to start this & help other ladies learn about portioning their foods, give them the support & accountability they need, and ideas. When I first started in February I have to be honest I was a little "iffy" on joining this program and if I would stick with it. But I have & I will say I don't feel like I am dieting where I think I may cheat & mess my whole gig. It's a lifestyle. I eat my foods in portions, do light workouts (because of my back I do what I can), and feel AMAZING now! I can't wait to help these ladies reach their goals and FEEL AWESOME!


Well I am on to planning for my challenge group and for my new 4th grade class while I attempt to also watch a movie at the same time (can we say multi-tasking? lol) Hopefully I can get more with making things for my class now that I know what grade level I am teaching.
